- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375Β°F (190Β°C).
- Using a sharp knife, cut a pocket into each chicken breast.
- In a bowl, mix the chopped spinach, minced garlic, and shredded mozzarella.
- Stuff each chicken breast with the spinach mixture and secure with toothpicks.
- Season the outside of the chicken breasts with salt and pepper, then drizzle with olive oil.
- Place the chicken in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through.
- Let rest for 5 minutes before serving.
Notes
For extra flavor, add some parmesan cheese to the stuffing. Ensure chicken reaches an internal temperature of 165Β°F.
