Description

A simple and nutritious side dish featuring sautéed spinach and creamy white beans.


Ingredients

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 5 ounces fresh spinach
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Lemon wedges for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add white beans and cook for 2 minutes, stirring occasionally.
  4. Add spinach in batches, stirring until wilted, about 3-4 minutes.
  5. Season with salt, pepper, and red pepper flakes if using.
  6. Serve with lemon wedges.
