Description

A hearty and comforting casserole that captures all the classic flavors of stuffed bell peppers, made easy in one dish.


Ingredients

  • 1 lb ground beef
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (8 oz) tomato sauce
  • 1 cup cooked rice
  • 2 cups chopped bell peppers (any color)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and onion is tender. Drain fat.
  3. Stir in diced tomatoes, tomato sauce, cooked rice, chopped bell peppers, oregano, basil, salt, and pepper. Bring to a boil.
  4. Transfer mixture to a greased 9×13-inch baking dish.
  5. Bake uncovered for 20 minutes.
  6. Sprinkle mozzarella and Parmesan cheeses over the top. Bake for an additional 10 minutes, or until cheese is melted and bubbly.
  7. Let stand for 5 minutes before serving.

Notes

For a spicier version, add 1/4 teaspoon red pepper flakes with the herbs. You can substitute ground turkey or Italian sausage for the beef.
