Description

These healthy muffins combine oats, fresh apples, and carrots for a nutritious, sugar-free treat perfect for breakfast or snacks.


Ingredients

  • 2 cups rolled oats
  • 1 cup grated apples
  • 1 cup grated carrots
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey or alternative sweetener
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the rolled oats, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the grated apples, grated carrots, applesauce, honey, and eggs.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Spoon the batter into the muffin tin, filling each cup about 3/4 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container for up to 5 days. These muffins are naturally gluten-free if using certified gluten-free oats.
