- 2 cups rolled oats
- 1 cup grated apples
- 1 cup grated carrots
- 1/2 cup unsweetened applesauce
- 1/4 cup honey or alternative sweetener
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350Β°F (175Β°C) and line a muffin tin with paper liners.
- In a large bowl, mix the rolled oats, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, combine the grated apples, grated carrots, applesauce, honey, and eggs.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Spoon the batter into the muffin tin, filling each cup about 3/4 full.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Store in an airtight container for up to 5 days. These muffins are naturally gluten-free if using certified gluten-free oats.
