A refreshing summer salad combining juicy peaches and watermelon with a light dressing.
Ingredients

- 4 cups cubed seedless watermelon
- 2 ripe peaches, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh mint leaves
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine the watermelon, peaches, red onion, and mint leaves.
- In a small bowl, whisk together the olive oil, lime juice, salt, and pepper to make the dressing.
- Pour the dressing over the salad and toss gently to combine.
- Sprinkle the feta cheese on top.
- Serve immediately or chill for 15 minutes before serving.
