Description

Ingredients

  • 8 oz spaghetti
  • 2 boneless skinless chicken breasts, sliced
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes (in oil), drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 3 cups fresh spinach
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Cook spaghetti according to package directions until al dente. Drain and set aside.
  2. While pasta cooks, season chicken slices with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 4-5 minutes per side. Remove chicken and set aside.
  3. In the same skillet, reduce heat to medium. Add garlic and sun-dried tomatoes; sauté for 1 minute until fragrant.
  4. Pour in heavy cream and chicken broth, stirring to combine. Bring to a gentle simmer.
  5. Stir in Parmesan cheese until melted and sauce thickens slightly, about 2-3 minutes.
  6. Add fresh spinach and cook until wilted, about 2 minutes.
  7. Return chicken to the skillet. Add cooked spaghetti and toss everything together until evenly coated. Serve immediately, garnished with extra Parmesan if desired.
