- 8 ounces linguine
- 1/2 cup sun-dried tomatoes in oil, drained and chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 3 cups fresh spinach
- Salt and pepper to taste
- 1/4 cup pine nuts (optional)
Instructions
- Cook linguine according to package directions; drain and reserve 1/2 cup pasta water.
- In a large skillet, heat 1 tablespoon oil from sun-dried tomatoes over medium heat. Add garlic and sun-dried tomatoes; cook 1 minute.
- Stir in heavy cream and Parmesan; cook until slightly thickened, about 3 minutes.
- Add spinach; cook until wilted, about 2 minutes. Season with salt and pepper.
- Toss with linguine, adding pasta water if needed for consistency. Garnish with pine nuts if desired.
Notes
For a lighter version, substitute half-and-half for heavy cream. Toast pine nuts in a dry skillet for extra flavor.
