- 2 medium sweet potatoes, sliced into 1/2-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (8-ounce) wheel of brie cheese, cut into small wedges
- 1/2 cup honey
- 1 teaspoon red pepper flakes (or more to taste)
- 1/3 cup shelled pistachios, crushed
- Fresh thyme leaves for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
- Arrange sweet potato rounds in a single layer on the prepared baking sheet. Roast for 15 minutes, then flip and roast another 10 minutes until tender and lightly browned.
- While sweet potatoes roast, make the hot honey: In a small saucepan, combine honey and red pepper flakes. Warm over low heat for 2-3 minutes until fragrant and honey is thin. Remove from heat and set aside.
- Remove baking sheet from oven. Top each sweet potato round with a small piece of brie cheese.
- Return to oven and bake for 5-7 minutes, until brie is melted and bubbly.
- Transfer sweet potato rounds to a serving platter. Drizzle with hot honey, sprinkle with crushed pistachios, and garnish with fresh thyme if desired. Serve immediately.
Notes
Make ahead: Sweet potato rounds can be roasted a day in advance and reheated before adding brie. Adjust red pepper flakes in hot honey to your preferred spice level. For a milder version, use regular honey.
