Description

Roasted sweet potato rounds topped with creamy melted brie, drizzled with spicy hot honey and finished with crunchy crushed pistachios. A perfect appetizer or side dish that balances sweet, savory, and heat.


Ingredients

  • 2 medium sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (8-ounce) wheel of brie cheese, cut into small wedges
  • 1/2 cup honey
  • 1 teaspoon red pepper flakes (or more to taste)
  • 1/3 cup shelled pistachios, crushed
  • Fresh thyme leaves for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
  3. Arrange sweet potato rounds in a single layer on the prepared baking sheet. Roast for 15 minutes, then flip and roast another 10 minutes until tender and lightly browned.
  4. While sweet potatoes roast, make the hot honey: In a small saucepan, combine honey and red pepper flakes. Warm over low heat for 2-3 minutes until fragrant and honey is thin. Remove from heat and set aside.
  5. Remove baking sheet from oven. Top each sweet potato round with a small piece of brie cheese.
  6. Return to oven and bake for 5-7 minutes, until brie is melted and bubbly.
  7. Transfer sweet potato rounds to a serving platter. Drizzle with hot honey, sprinkle with crushed pistachios, and garnish with fresh thyme if desired. Serve immediately.

Notes

Make ahead: Sweet potato rounds can be roasted a day in advance and reheated before adding brie. Adjust red pepper flakes in hot honey to your preferred spice level. For a milder version, use regular honey.
