- 2 medium sweet potatoes, peeled and grated
- 1 cup red lentils, rinsed
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- For the sauce: 2 ripe avocados
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1/2 cup Greek yogurt
Instructions
- Step 1: Cook the red lentils in boiling water for 15 minutes until soft, then drain.
- Step 2: In a large bowl, mix the grated sweet potatoes, cooked lentils, onion, garlic, cumin, paprika, salt, and pepper.
- Step 3: Form the mixture into patties.
- Step 4: Heat olive oil in a skillet over medium heat and fry the patties for 4-5 minutes on each side until golden.
- Step 5: For the sauce, blend avocados, cilantro, lime juice, and Greek yogurt until smooth.
- Step 6: Serve the patties with the sauce on top.
Notes
Ensure lentils are fully cooked for the best texture. This recipe is vegan if you omit the Greek yogurt in the sauce.
