Description

Delicious patties made from mashed sweet potatoes and red lentils, served with a creamy tangy tahini dressing for a healthy meal.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • For the dressing: 1/4 cup tahini, 2 tablespoons lemon juice, 1 tablespoon water, 1 garlic clove, minced

Instructions

  1. Boil the sweet potatoes in a pot of water until soft, about 15 minutes; drain and mash.
  2. In a separate pot, cook the red lentils according to package instructions until tender.
  3. In a pan, sauté the onion and garlic in olive oil until translucent.
  4. Mix the mashed sweet potatoes, cooked lentils, sautéed onion mixture, cumin, paprika, salt, and pepper in a bowl.
  5. Form the mixture into patties and fry in olive oil over medium heat until golden brown on both sides.
  6. For the dressing, whisk together tahini, lemon juice, water, and minced garlic until smooth.
  7. Serve the patties with the tangy tahini dressing on top.

Notes

These patties are best served fresh and can be made vegan by ensuring all ingredients are plant-based. Store leftovers in the fridge for up to 2 days.
