- 2 pounds boneless chicken breasts, cut into 1-inch cubes
- 1 cup pineapple chunks
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into wedges
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 2 tablespoons rice vinegar
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- Salt and pepper to taste

Instructions
- In a bowl, whisk together soy sauce, brown sugar, ketchup, rice vinegar, garlic, and ginger to make the marinade.
- Add chicken cubes to the marinade and refrigerate for at least 1 hour.
- Preheat grill to medium-high heat.
- Thread marinated chicken, pineapple, bell peppers, and onion onto skewers.
- Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through.
- Serve hot with rice or salad.
Notes
For extra flavor, let the chicken marinate overnight. Use metal skewers to avoid burning.
