Description

A sweet and moist bread infused with tropical mango flavors, perfect for breakfast or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups mashed ripe mangoes
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, beat the sugar, eggs, oil, and vanilla extract until well combined.
  4. Stir in the mashed mangoes until incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in walnuts if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For extra moisture, use very ripe mangoes. Store in an airtight container for up to 3 days.
