Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups mashed ripe mangoes
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350Β°F (175Β°C) and grease a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, beat the sugar, eggs, oil, and vanilla extract until well combined.
- Stir in the mashed mangoes until incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in walnuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For extra moisture, use very ripe mangoes. Store in an airtight container for up to 3 days.
