- 2 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup boiling water
- For the fudge frosting: 1 cup unsalted butter, 1 1/2 cups unsweetened cocoa powder, 6 cups powdered sugar, 2/3 cup milk, 2 teaspoons vanilla extract
Instructions
- Preheat your oven to 350Β°F (175Β°C). Grease and flour two 9-inch round baking pans.
- In a large bowl, stir together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the eggs, milk, oil, and vanilla extract; beat on medium speed for 2 minutes.
- Stir in the boiling water (batter will be thin). Pour evenly into the prepared pans.
- Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pans for 10 minutes, then remove to wire racks to cool completely.
- For the frosting: Melt butter and stir in cocoa powder. Alternately add powdered sugar and milk, beating to spreading consistency. Add vanilla extract.
- Frost the cooled cakes and stack them.
