Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 cup mashed ripe bananas (about 3 bananas)
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts
  • 1/2 cup buttermilk

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease and flour a 9×13 inch pan.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time.
  4. Stir in mashed bananas and vanilla. Add flour mixture alternately with buttermilk, mixing until just combined.
  5. Fold in walnuts. Pour batter into prepared pan.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool before serving.

Notes

For best results, use overripe bananas. Store in an airtight container for up to 3 days.
