A creamy and refreshing ice cream made with fresh watermelon and pistachios, ideal for summer treats.

- 2 cups fresh watermelon, pureed
- 1 cup shelled pistachios, chopped
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Puree the fresh watermelon in a blender until smooth.
- In a bowl, mix the pureed watermelon, chopped pistachios, heavy cream, sugar, vanilla extract, and salt.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
- Transfer the churned ice cream to a freezer-safe container and freeze for at least 4 hours or until firm.
- Serve scoops of the ice cream in bowls or cones.
Notes
For a dairy-free version, substitute heavy cream with coconut milk. Store in an airtight container for up to 1 week.
