- 1 baguette, sliced into 1/2-inch thick rounds
- 8 ounces brie cheese, rind removed
- 1/4 cup heavy cream
- 1 cup fresh blueberries
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 2 tablespoons hot honey (or regular honey mixed with red pepper flakes)
- 1/4 cup fresh basil leaves, thinly sliced
- Salt and black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet and toast for 5-7 minutes until golden. Set aside.
- In a small bowl, combine the brie and heavy cream. Microwave in 20-second intervals, stirring until smooth and creamy. Season with a pinch of salt and pepper.
- In a separate bowl, toss blueberries with honey and lemon juice. Spread on a parchment-lined baking sheet and roast for 10-12 minutes until bursting and syrupy.
- Spread a generous layer of whipped brie on each crostini. Top with a spoonful of roasted blueberries, drizzle with hot honey, and garnish with fresh basil. Serve immediately.
Notes
If using regular honey, add a pinch of red pepper flakes to make it hot. For a milder version, omit the heat entirely. This can be served warm or at room temperature.
