Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, softened
  • 1 cup lemon curd
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • Zest of 2 lemons
  • Juice of 2 lemons

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and grease a cake pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the lemon zest and juice.
  5. In another bowl, sift together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk, until just combined.
  7. Fold in the lemon curd gently.
  8. Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted comes out clean.
  9. Allow the cake to cool completely before serving.
