Description

A classic lemon meringue pie with a zesty lemon filling and fluffy meringue topping.


Ingredients

  • 1 1/2 cups sugar
  • 1/3 cup cornstarch
  • 1 1/2 cups water
  • 3 egg yolks, beaten
  • 3 tablespoons butter
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 pre-baked 9-inch pie crust
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 6 tablespoons sugar

Instructions

  1. In a saucepan, combine 1 1/2 cups sugar, cornstarch, and water; cook over medium heat until thickened.
  2. Stir in beaten egg yolks, butter, lemon juice, and lemon zest; cook until mixture boils.
  3. Pour filling into the pre-baked pie crust.
  4. In a separate bowl, beat egg whites and cream of tartar until soft peaks form; gradually add 6 tablespoons sugar and beat until stiff.
  5. Spread meringue over filling, sealing edges.
  6. Bake at 350Β°F for 12-15 minutes or until meringue is golden.

Notes

Ensure the meringue is spread to the edges to prevent shrinking. Chill before serving for best results.
