Ingredients

- 1/3 cup cornstarch
- 1 1/2 cups water
- 3 egg yolks, beaten

- 1/2 cup lemon juice

- 1 pre-baked 9-inch pie crust
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 6 tablespoons sugar
Instructions
- In a saucepan, combine 1 1/2 cups sugar, cornstarch, and water; cook over medium heat until thickened.
- Stir in beaten egg yolks, butter, lemon juice, and lemon zest; cook until mixture boils.
- Pour filling into the pre-baked pie crust.
- In a separate bowl, beat egg whites and cream of tartar until soft peaks form; gradually add 6 tablespoons sugar and beat until stiff.
- Spread meringue over filling, sealing edges.
- Bake at 350Β°F for 12-15 minutes or until meringue is golden.
Notes
Ensure the meringue is spread to the edges to prevent shrinking. Chill before serving for best results.
