Ingredients

  • 2 ripe avocados, diced
  • 2 cups cooked brown rice
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice

  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Cook the brown rice according to package instructions and set aside.
  2. In a bowl, whisk together lime juice, olive oil, garlic, cumin, salt, and pepper to make the cilantro lime sauce.
  3. Heat a skillet over medium heat, add shrimp and cook for 3-4 minutes until pink and opaque.
  4. In a large bowl, combine cooked rice, diced avocados, chopped cilantro, and cooked shrimp.
  5. Drizzle the cilantro lime sauce over the mixture and toss gently to combine.
