Zucchini Grilled Cheese

Description

A low-carb and gluten-free twist on the classic grilled cheese, using zucchini slices as the ‘bread.’ Crispy, cheesy, and delicious.


Ingredients

  • 2 medium zucchini, ends trimmed
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices cheddar cheese (or your favorite)
  • Optional: 1/4 cup marinara sauce for dipping

Instructions

  1. 1. Slice zucchini lengthwise into 1/4-inch thick slices (you should get about 8 slices).
  2. 2. Brush the zucchini slices with 1 tablespoon olive oil and sprinkle with garlic powder, salt, and pepper.
  3. 3. Heat a grill pan or large skillet over medium heat and add the remaining tablespoon of olive oil.
  4. 4. Cook the zucchini slices for 2-3 minutes per side, until tender and grill marks appear. Remove from pan.
  5. 5. Place a slice of cheese on one half of the zucchini slices and top with another zucchini slice to form a sandwich.
  6. 6. Return the sandwiches to the pan and cook for 1-2 minutes per side, until the cheese is melted and the zucchini is warmed through.
  7. 7. Serve immediately.

Notes

If you prefer a more traditional grilled cheese, you can add a slice of tomato or some fresh spinach. For a dairy-free option, use vegan cheese.
