Greek Beef Wraps with Roasted Garlic Feta Sauce

Description

Tender, seasoned beef wrapped in warm pita with crunchy vegetables and a creamy roasted garlic feta sauce. A quick and satisfying Mediterranean-inspired meal.


Ingredients

  • 1 1/2 lbs beef sirloin or flank steak, thinly sliced
  • 2 tbsp olive oil
  • 2 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and black pepper to taste
  • 4 large pita breads or flatbreads
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • Fresh parsley or mint for garnish
  • For the Roasted Garlic Feta Sauce:
  • 1 head garlic
  • 1 tsp olive oil
  • 6 oz crumbled feta cheese
  • 1/4 cup Greek yogurt
  • 2 tbsp lemon juice
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp water (as needed)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Cut the top off the garlic head to expose cloves, drizzle with 1 tsp olive oil, wrap in foil, and roast for 35-40 minutes until soft. Let cool slightly.
  2. While garlic roasts, prepare the beef: In a bowl, combine sliced beef with 2 tbsp olive oil, oregano, cumin, paprika, salt, and pepper. Toss to coat. Let marinate for at least 15 minutes.
  3. Make the sauce: Squeeze roasted garlic cloves out of their skins into a food processor. Add feta, yogurt, lemon juice, 2 tbsp olive oil, and a pinch of salt. Blend until smooth, adding water 1 tbsp at a time until pourable consistency. Season with pepper. Set aside.
  4. Heat a large skillet or grill pan over medium-high heat. Add the marinated beef in a single layer (cook in batches if needed). Sear for 2-3 minutes per side until browned and cooked through. Remove from heat.
  5. Warm the pita breads in the skillet or oven for about 1 minute per side. Spread a generous amount of roasted garlic feta sauce on each pita.
  6. Top with cooked beef, cherry tomatoes, cucumber, red onion, olives, and crumbled feta. Garnish with fresh parsley or mint. Serve immediately.

Notes

For a lighter version, use lean beef or chicken. The roasted garlic feta sauce can be made up to 3 days ahead and stored in the refrigerator. Warm pitas directly on a gas flame for a charred flavor.
