- For the Meatballs:
- 1 lb ground lamb or beef
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 large egg
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (for frying)
- For the Tzatziki:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and drained
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill
- 1 clove garlic, minced
- Salt to taste
- For the Hummus:
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1 clove garlic
- 1/2 teaspoon salt
- Water as needed for consistency
- For the Village Salad:
- 2 cups diced cucumber
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup crumbled feta cheese
- 1/4 cup Kalamata olives
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- Salt and oregano to taste
Instructions
- Prepare the meatballs: In a bowl, combine ground meat, breadcrumbs, onion, garlic, egg, oregano, cumin, salt, and pepper. Mix well and form into 1-inch meatballs.
- Heat olive oil in a large skillet over medium heat. Cook meatballs in batches until browned on all sides and cooked through, about 8-10 minutes. Set aside.
- Make the tzatziki: In a small bowl, combine Greek yogurt, grated cucumber, lemon juice, dill, garlic, and salt. Stir well and refrigerate until ready to serve.
- Make the hummus: In a food processor, combine chickpeas, tahini, lemon juice, olive oil, garlic, and salt. Blend until smooth, adding water a tablespoon at a time to reach desired consistency. Transfer to a bowl.
- Prepare the salad: In a large bowl, combine cucumber, tomatoes, onion, feta cheese, and olives. Drizzle with olive oil and red wine vinegar, season with salt and oregano, and toss gently.
- Assemble the bowls: Divide the salad among serving bowls. Add a generous scoop of hummus, a few meatballs, and a dollop of tzatziki. Serve immediately.
Notes
For a lighter version, use ground turkey or chicken. The tzatziki can be made a day ahead for better flavor. Adjust the hummus consistency with extra water if needed.
