Description

Ingredients

  • For the Meatballs:
  • 1 lb ground lamb or beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)
  • For the Tzatziki:
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • 1 clove garlic, minced
  • Salt to taste
  • For the Hummus:
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic
  • 1/2 teaspoon salt
  • Water as needed for consistency
  • For the Village Salad:
  • 2 cups diced cucumber
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup crumbled feta cheese
  • 1/4 cup Kalamata olives
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and oregano to taste

Instructions

  1. Prepare the meatballs: In a bowl, combine ground meat, breadcrumbs, onion, garlic, egg, oregano, cumin, salt, and pepper. Mix well and form into 1-inch meatballs.
  2. Heat olive oil in a large skillet over medium heat. Cook meatballs in batches until browned on all sides and cooked through, about 8-10 minutes. Set aside.
  3. Make the tzatziki: In a small bowl, combine Greek yogurt, grated cucumber, lemon juice, dill, garlic, and salt. Stir well and refrigerate until ready to serve.
  4. Make the hummus: In a food processor, combine chickpeas, tahini, lemon juice, olive oil, garlic, and salt. Blend until smooth, adding water a tablespoon at a time to reach desired consistency. Transfer to a bowl.
  5. Prepare the salad: In a large bowl, combine cucumber, tomatoes, onion, feta cheese, and olives. Drizzle with olive oil and red wine vinegar, season with salt and oregano, and toss gently.
  6. Assemble the bowls: Divide the salad among serving bowls. Add a generous scoop of hummus, a few meatballs, and a dollop of tzatziki. Serve immediately.

Notes

For a lighter version, use ground turkey or chicken. The tzatziki can be made a day ahead for better flavor. Adjust the hummus consistency with extra water if needed.
