Description

A quick and delicious weeknight pasta dish featuring cheese tortellini, roasted cherry tomatoes, creamy burrata, toasted pine nuts, and a bright lemon basil dressing.


Ingredients

  • 1 lb cheese tortellini
  • 2 cups cherry tomatoes, halved
  • 3 tablespoons olive oil, divided
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup pine nuts
  • 8 oz burrata cheese, torn
  • 1/4 cup fresh basil leaves, chopped
  • Zest and juice of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place halved cherry tomatoes on the baking sheet. Drizzle with 1 tablespoon olive oil, season with salt and pepper. Roast for 15-20 minutes until softened and lightly charred.
  3. Meanwhile, cook tortellini according to package directions. Drain and set aside.
  4. In a small skillet over medium heat, toast pine nuts until golden, about 3-4 minutes, stirring frequently. Set aside.
  5. In a large bowl, whisk together remaining 2 tablespoons olive oil, lemon zest, lemon juice, and chopped basil. Add cooked tortellini and roasted tomatoes, toss to coat.
  6. Transfer pasta to serving plates. Top with torn burrata and toasted pine nuts. Garnish with additional basil if desired. Serve immediately.
