I still remember the first time I created this creamy garlic Parmesan chicken with cheesy twisted pasta in my tiny NYC apartment kitchen. It was one of those crisp autumn evenings when the leaves in Central Park had just started turning, and I craved something that felt both indulgent and effortless – a dish that wrapped you in a warm hug without keeping you chained to the stove. My mother in Morocco always said that the best meals come from a place of love, not fuss, and this glorious pan-to-oven wonder delivers exactly that. I borrowed the French technique of building a quick, glossy pan sauce – something I honed during my Paris training – and gave it an Italian-American twist that makes every bite pure joy. The garlic Parmesan chicken emerges incredibly juicy, nestled in a velvety cream sauce, while the cheesy twisted pasta underneath soaks up all that richness. It’s my go-to when I need a dinner that feels special but comes together in under 45 minutes.

The first forkful is a revelation: the chicken is browned to a deep golden hue, its surface flecked with Parmesan and just a whisper of red pepper heat. As you cut into it, the meat is so tender it almost falls apart, and the sauce – oh, that sauce – is a silky blanket of heavy cream, garlic, and nutty Parmesan, with a splash of chicken broth to keep it from becoming too heavy. The twisted pasta, whether you choose rotini or cavatappi, cradles little pools of melted mozzarella, creating stretchy, cheesy strands that bind the dish together. The aroma alone will draw everyone to the kitchen: garlic sizzling in olive oil, the savory scent of seared chicken, and the unmistakable perfume of baked Parmesan. I’ve designed this cheesy twisted pasta recipe so that every element plays its part – the sharp Parmesan cuts through the richness, the mozzarella gives pull, and the parsley adds a fresh, peppery finish that brightens the plate.

What sets my creamy garlic Parmesan chicken apart is the one-skillet method that goes from stovetop to oven, locking in flavor and minimizing cleanup – something every busy cook will appreciate. Too often, cream-based chicken dishes turn out bland or watery, but I’ll share my chef’s secret for a perfectly balanced sauce that clings to every nook of the pasta. I’ve also included a common mistake many home cooks make (and how a simple five-second fix can save the whole meal), plus my go-to twist: using twisted pasta shapes that catch more cheese. By the end of this post, you’ll have a foolproof, restaurant-quality dinner your family will request again and again – and a few tricks up your sleeve from my Moroccan heritage and French training.

Why This Creamy Garlic Parmesan Chicken Pasta Recipe Is the Best

The Flavor Secret: I learned in Paris that a great pan sauce needs a foundation of deeply browned bits, or *fond*, left in the skillet after searing. When you cook the chicken and then build the sauce in the same pan, you capture all those caramelized flavors, which meld with the garlic and Parmesan. A pinch of red pepper flakes – a trick I picked up from my mother’s harissa-spiked tagines – adds a subtle warmth that awakens the palate without overwhelming the dish. The result is a cream sauce that’s multidimensional, not just heavy, and every strand of twisted pasta becomes a vehicle for that luscious, salty-umami goodness.

Perfected Texture: The texture contrast here is intentional. The chicken breast, if cooked properly, stays moist and tender inside its golden crust. Baking it in the sauce ensures it never dries out – a technique I perfected after encountering too many dry chicken breasts at dinner parties. The twisted pasta, thanks to its spirals and ridges, holds onto the mozzarella and sauce better than any smooth pasta could. I use cavatappi or rotini because the cheese gets trapped inside those curls, delivering little pockets of molten mozzarella in every bite. It’s a small detail that elevates the dish from ordinary to extraordinary.

Foolproof & Fast: This recipe is designed for real life. With only 15 minutes of hands-on time, you can have dinner on the table in 45 minutes flat. The instructions are broken down into clear steps that even a novice can follow, and the one-pan approach means less time scrubbing pots. I’ve included visual cues – like how the chicken should look when it’s properly seared – and temperature references so you never second-guess doneness. Trust me: once you master this creamy chicken pasta, you’ll find yourself adapting it with any protein or pasta shape you have on hand.

Creamy Garlic Parmesan Chicken Pasta Ingredients

I source almost all of these ingredients from my local farmers market in Union Square or my favorite Italian deli in the Bronx – there’s nothing like freshly grated Parmigiano-Reggiano to make a sauce sing. My mother would always tell me to “smell the garlic” before buying it; if it lacks that pungent, spicy aroma, it won’t deliver the flavor we need. For the chicken, I opt for air-chilled, organic breasts – they sear more evenly and stay juicier. Don’t be intimidated by the cream; using just one cup keeps the dish rich without being cloying, and the chicken broth lightens it perfectly.

Ingredients List

  • For the Creamy Garlic Parmesan Chicken:
  • 1 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • For the Cheesy Twisted Pasta:
  • 8 oz twisted pasta (rotini or cavatappi)
  • 1 cup shredded mozzarella cheese
  • ¼ cup chopped parsley for garnish

Ingredient Spotlight

Chicken Breasts: Boneless, skinless breasts are the lean canvas of this dish. Look for pieces of even thickness so they cook uniformly – if they’re very thick, I gently pound them to about ¾ inch. If you prefer thighs, they’ll work beautifully: they’re juicier and more forgiving, but you’ll need to increase the baking time by 5 minutes. Expect a richer, slightly darker meat flavor.

Heavy Cream: The backbone of the sauce, heavy cream delivers that luxurious, velvety mouthfeel. It also resists curdling at high heat, unlike milk. For a lighter alternative, half-and-half will work, but the sauce will be thinner and you’ll want to simmer it a minute or two longer to thicken slightly. Do not use fat-free half-and-half – it can separate.

Parmesan Cheese: I insist on freshly grated Parmesan (Parmigiano-Reggiano if possible). Pre-shredded cheeses often contain anti-caking agents that prevent smooth melting. Grate it yourself using a microplane for the finest, melt-in-the-mouth texture. If you have to substitute, Grana Padano or Pecorino Romano are excellent, though Pecorino is saltier, so reduce the added salt.

Twisted Pasta: Rotini and cavatappi are my top picks because their spiral shape captures sauce and cheese inside and out. Fusilli or gemelli also work. In a pinch, penne or rigatoni will do, but you’ll lose some of the “twisted” magic. For a whole-grain or protein-plus option, Barilla Protein+ rotini keeps the texture close to traditional pasta.

How to Make Creamy Garlic Parmesan Chicken with Cheesy Twisted Pasta – Step-by-Step

Take a deep breath – this recipe is a calm, stepwise dance. I’ll walk you through every sizzle and simmer, just like my *chef de cuisine* in Paris did for me. Grab your oven-safe skillet (a 12-inch cast iron is a dream), and let’s begin.

Step 1: Preheat Oven & Cook Pasta

Preheat your oven to 375°F. Bring a large pot of salted water to a rolling boil and cook 8 oz of twisted pasta until al dente – usually 1 minute less than the package says. Drain and set aside. Salting the water well is crucial; it seasons the pasta from within. I like to reserve a splash of pasta water just in case I need to loosen the cheese later.

💡 Lalybeth’s Pro Tip: After draining, toss the pasta with a tiny drizzle of olive oil to prevent sticking, especially if you’re not assembling immediately.

Step 2: Sear Chicken to Golden Perfection

Pat the chicken breasts dry with paper towels – this is essential for a good sear. Season generously on both sides with salt and pepper. In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high until shimmering. Lay the chicken in the pan away from you and cook undisturbed for 4-5 minutes per side, until deeply golden brown. The chicken should release easily from the pan when it’s ready to flip. Transfer chicken to a plate; it will finish cooking in the oven.

⚠️ Common Mistake to Avoid: Overcrowding the pan. If your skillet isn’t big enough, sear the chicken in batches. Crowding steams the meat instead of browning it, and you’ll lose that flavorful fond that builds the sauce.

Step 3: Build the Creamy Garlic Parmesan Sauce

Reduce the heat to medium. In the same skillet, add the minced garlic and sauté for just 30 seconds until fragrant – don’t let it brown or it will turn bitter. Immediately pour in 1 cup of heavy cream and ½ cup of chicken broth. Stir with a wooden spoon, scraping up all those glorious browned bits from the bottom of the pan. Bring to a gentle simmer, then whisk in ½ cup of grated Parmesan cheese. Keep stirring for about 1 minute until the cheese fully melts and the sauce thickens slightly. Season with ¼ teaspoon black pepper and optional red pepper flakes. Taste and add salt only if needed; Parmesan is already salty.

💡 Lalybeth’s Pro Tip: For an even silkier sauce, take the pan off the heat when you add the Parmesan and whisk continuously. The residual heat melts the cheese without risk of graininess.

Step 4: Bake the Chicken in the Sauce

Return the seared chicken breasts to the skillet, nestling them into the cream sauce. Spoon some sauce over the top of each piece so they’re well coated. Carefully transfer the skillet to the preheated oven. Bake for 15 minutes, or until the internal temperature of the chicken reaches 165°F on an instant-read thermometer. The sauce will bubble and reduce slightly, intensifying in flavor.

⚠️ Common Mistake to Avoid: Baking in a cold or non-oven-safe skillet. Always check that your skillet’s handle is oven-proof. If not, transfer everything to a baking dish before placing in the oven.

Step 5: Toss Pasta with Mozzarella

While the chicken bakes, place the cooked, drained pasta in a medium bowl or back into its pot. Add 1 cup of shredded mozzarella cheese and toss until the heat of the pasta begins to melt the cheese. If using a separate baking dish, you can spread the cheesy pasta in an even layer there. If your skillet is large enough (at least 12 inches), you can clear a space and add the pasta right to the skillet after the chicken is done – but it’s easier to plate separately.

💡 Lalybeth’s Pro Tip: Shred your own mozzarella from a block; pre-shredded often contains starch that inhibits melting. Low-moisture part-skim mozzarella gives the best stretch without watering down the dish.

Step 6: Assemble & Serve

Remove the skillet from the oven (careful, the handle is hot!). Let the chicken rest in the sauce for 2-3 minutes. To serve, spoon a generous portion of cheesy twisted pasta onto each plate, top with a piece of the creamy garlic Parmesan chicken, and ladle extra sauce over everything. Sprinkle with fresh chopped parsley for a pop of color and freshness. Serve immediately while the mozzarella is still stretchy.

⚠️ Common Mistake to Avoid: Skipping the parsley garnish. It’s not just pretty – the herbaceous note cuts through the richness and wakes up your palate. A sprinkle of red pepper flakes at the table is also a nice touch.

Serving & Presentation

I like to plate this dish family-style, bringing the skillet straight to the table with a trivet underneath – the rustic look always earns “oohs” and “aahs.” But for individual plates, a shallow bowl works best to hold the sauce. Nestle the chicken slightly off-center on a bed of cheesy pasta, drizzle a spoonful of extra cream sauce over the top, and finish with a generous sprinkle of parsley and a tiny crack of fresh black pepper. For a restaurant touch I picked up in Paris, shave a few curls of Parmigiano-Reggiano over the dish just as it lands on the table – the warm sauce gently softens the curls.

To round out the meal, I often serve a simple arugula salad dressed with lemon and olive oil – the peppery greens contrast the richness beautifully. Or, when I’m channeling my mother’s Moroccan table, a side of sautéed green beans with toasted almonds and a pinch of cumin provides an earthy, slightly exotic note that surprises guests. And don’t forget a crusty baguette or garlic bread to mop up every last drop of that incredible sauce – this is New York, after all, and we never waste a good sauce.

Make-Ahead, Storage & Reheating

In my NYC kitchen, I’m all about efficient meal prep. This creamy garlic Parmesan chicken with cheesy twisted pasta can be partially prepped a day in advance, making weeknight dinners a breeze. I often sear the chicken and make the sauce (without baking) the night before, then store them separately. The pasta is best cooked fresh, but you can boil it, toss with a bit of olive oil, and refrigerate overnight. When ready to eat, just assemble and bake – it adds only 5 extra minutes to the total time.

MethodContainerDurationReheating Tip
RefrigeratorAirtight glass containerUp to 4 daysReheat gently on stovetop with a splash of broth or cream; microwave in 30-sec bursts.
FreezerFreezer-safe container, sauce separate if possibleUp to 2 monthsThaw overnight in fridge; reheat in oven at 350°F, covered, adding a little cream.
Make-AheadSeparate ziplock bags or containersPrep chicken & sauce 1 day ahead; cook pasta freshAssemble directly from fridge, add 3-5 min to baking time.

One thing I’ve learned: cream sauces can sometimes break when reheated. To bring leftovers back to life, add a splash of chicken broth or milk and warm slowly over low heat, stirring constantly. The sauce will re-emulsify and regain its silky texture. The melted mozzarella on the pasta will firm up in the fridge, but a gentle reheat in a skillet with a lid brings back that irresistible cheese pull. Trust me, this dish is almost better the next day – the garlic and Parmesan meld deeper into the chicken.

Variations & Easy Swaps

VariationKey ChangeBest ForDifficulty Impact
Lighter Herb-Lemon TwistReplace half the cream with milk + lemon zest & thymeSummer dinner, brighter flavorEasier – less richness, more forgiving
Gluten-Free & Dairy-FreeGF twisted pasta, coconut cream, nutritional yeast + vegan mozzarellaDietary restrictionsMedium – flavor profile changes considerably
Spicy Moroccan Harissa KickAdd 1-2 tbsp harissa paste to the sauce, garnish with cilantroAdventurous eaters, heat loversEasy – just stir in paste

Lighter Herb-Lemon Twist

On warmer evenings, I love lightening this dish with a Provençal touch. Swap out half the heavy cream for whole milk and add the zest of one lemon along with 1 teaspoon of fresh thyme leaves to the sauce. The lemon cuts through the dairy beautifully, while the thyme echoes the herb gardens I admired in Provence during my culinary travels. Finish with a handful of baby spinach wilted into the pasta for extra color and nutrients. The sauce will be thinner but still cling nicely; just simmer it an extra minute to concentrate the flavors.

Gluten-Free & Dairy-Free Version

For my dairy-free and gluten-free friends, I’ve tested this adaptation several times. Use a quality gluten-free rotini (Barilla makes a good one) and cook it exactly to package directions – gluten-free pasta can get mushy if overdone. For the sauce, full-fat coconut cream from a can mimics heavy cream’s richness; make sure to shake the can well before opening. Instead of Parmesan, blend 2 tablespoons nutritional yeast with ¼ cup of almond flour for a nutty, cheesy flavor, and use a dairy-free mozzarella shred that melts well (Violife is my pick). The result is surprisingly decadent, though the coconut adds a very slight sweetness – I balance it with an extra pinch of salt and a squeeze of lemon juice.

Spicy Moroccan Harissa Kick

This variation is a true nod to my Moroccan roots, blending the creaminess of the original with the fiery, aromatic punch of harissa – the North African chili paste my mother always kept in the fridge. Stir 1 to 2 tablespoons of harissa (depending on your heat tolerance) into the sauce after adding the cream, and swap the parsley garnish for fresh cilantro. A pinch of smoked paprika reinforces the depth, and I sometimes add sliced olives or preserved lemon for an even more pronounced Moroccan twist. The harissa brings a smoky, garlicky heat that elevates this cheesy twisted pasta into something truly unforgettable – it’s my favorite way to serve it when hosting friends who love bold flavors.

What is the best type of pasta to use for creamy garlic parmesan chicken with cheesy twisted pasta?

I recommend twisted pasta shapes like rotini or cavatappi for this recipe because their spirals and ridges trap the cream sauce and melted mozzarella in every nook. Cavatappi, with its hollow corkscrew shape, is especially good at holding cheese inside the tubes. Fusilli and gemelli work just as well. Avoid long noodles like spaghetti or angel hair; they don’t capture the sauce as effectively, and you’d miss the cheesy pockets that make this dish so satisfying.

Can I substitute heavy cream with milk in this creamy garlic parmesan chicken recipe?

Yes, you can substitute heavy cream with whole milk, but the sauce will be thinner and less rich. To compensate, I recommend using half whole milk and half half-and-half, then simmering the sauce for an extra 2-3 minutes to reduce and thicken. You can also whisk in a teaspoon of flour or cornstarch with the garlic before adding the liquid to help stabilize it. Avoid skim milk entirely – it lacks the fat needed for a smooth, creamy texture and may curdle at high heat.

How long does it take to cook creamy garlic parmesan chicken with cheesy twisted pasta?

From start to finish, this recipe takes about 45 minutes: 15 minutes of prep (chopping, grating cheese, trimming chicken) and 30 minutes of cooking time. The hands-on work is minimal – you’ll spend most of the time while the chicken bakes preparing the pasta or setting the table. If you’re an experienced cook, you can shave off 5-10 minutes by multitasking. It’s a perfect weeknight meal because the active cooking is quick, and the oven does the rest.

What can I serve on the side with creamy garlic parmesan chicken and cheesy twisted pasta?

Because this dish is rich, I love pairing it with something bright and green. A simple arugula salad with lemon vinaigrette, steamed broccoli with a squeeze of lemon, or roasted asparagus with olive oil and garlic all work beautifully. For a heartier meal, crusty garlic bread or a warm baguette is essential to soak up the extra sauce. If you want to add a vegetable directly to the dish, toss some sautéed spinach or sun-dried tomatoes into the pasta before adding the mozzarella.

Can I use chicken thighs instead of breasts in this recipe?

Absolutely! Boneless, skinless chicken thighs are a fantastic substitute – they stay incredibly juicy and have a richer flavor. Because thighs are thinner and contain more fat, they cook faster. Sear them for about 3-4 minutes per side, and check for doneness at 12 minutes in the oven (internal temperature should reach 165°F). The dish will be slightly more decadent, but in a wonderful way. Bone-in thighs can also be used, but increase baking time to 25-30 minutes.

How do I prevent the creamy garlic parmesan sauce from curdling?

Curdling usually happens when the dairy is heated too quickly or too high. Always use medium to medium-low heat when adding the cream and broth. Stir constantly and bring to a gentle simmer, not a rolling boil. Adding the Parmesan off the heat, as I suggest in the recipe, also helps because the residual warmth melts the cheese without shocking the cream. If your sauce does look grainy, a quick whisk with a splash of cold broth can often bring it back together.

Is this creamy garlic parmesan chicken with cheesy twisted pasta recipe gluten-free?

The standard recipe is not gluten-free because of the regular pasta. However, you can easily make it gluten-free by using a gluten-free twisted pasta (rotini or fusilli made from corn, rice, or lentils). Check the label to ensure it’s certified gluten-free. All other ingredients – chicken, cream, broth, cheese – are naturally gluten-free, but always verify that your chicken broth doesn’t contain hidden gluten. The dish will taste just as delicious with the swap.

Can I make this creamy chicken pasta ahead of time for a party?

Yes, with a few adjustments. I recommend searing the chicken and making the sauce up to a day in advance, then storing them in the fridge. Cook the pasta fresh just before assembling because it absorbs sauce and can become mushy if stored together. When ready to serve, place the chicken in the sauce, bake as directed (adding 3-5 minutes if everything is cold), and toss the hot pasta with mozzarella. The dish will still taste freshly made.

What’s the best way to reheat leftover creamy garlic parmesan chicken without drying it out?

Reheat gently on the stovetop over low heat. Place the chicken and sauce in a skillet with a splash of chicken broth or milk, cover with a lid, and warm for 5-7 minutes, turning once. The steam keeps the chicken moist, and the extra liquid revives the sauce. Avoid the microwave if possible, but if you must, use 50% power in 30-second intervals, adding a bit of liquid before heating. The pasta can be reheated separately in a skillet with a touch of water to melt the cheese again.

Can I add more vegetables to this creamy garlic parmesan chicken with cheesy twisted pasta?

Definitely! Sautéed mushrooms, wilted spinach, roasted red peppers, or steamed broccoli florets are all excellent additions. To incorporate them, stir the cooked vegetables into the pasta when you add the mozzarella, or spoon them around the chicken before baking. Mushrooms especially complement the cream sauce – sauté them after the chicken and before the garlic. Just avoid adding too many watery vegetables like zucchini without pre-cooking, as they can thin the sauce.
