  • 2 tbsp plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 small garlic clove, minced

  • For the Cranberry Drizzle:
  • 1/2 cup whole berry cranberry sauce
  • 1 tbsp balsamic vinegar
  • 1 tsp honey

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss carrot pieces with olive oil, salt, and pepper. Thread 3-4 carrot pieces onto each skewer.
  3. In a shallow dish, combine chopped pistachios and panko. Place beaten egg in another shallow dish.
  4. Dip each carrot skewer into the egg, then roll in the pistachio mixture, pressing gently to adhere. Place on prepared baking sheet.
  5. Bake for 18-20 minutes, until carrots are tender and crust is golden.
  6. Meanwhile, make the whipped feta: In a food processor, combine feta, cream cheese, yogurt, lemon juice, garlic, salt, and pepper. Process until smooth and creamy. Set aside.
  7. Make the cranberry drizzle: In a small bowl, whisk together cranberry sauce, balsamic vinegar, and honey. Warm slightly in microwave if desired.
  8. To serve, spread whipped feta on a platter, arrange carrot skewers on top, and drizzle with cranberry mixture. Enjoy warm or at room temperature.

Notes

To make this dish vegan, use a flax egg (1 tbsp ground flaxseed + 3 tbsp water) and replace feta with a plant-based alternative. Skewers can also be grilled over medium heat for 10-12 minutes.
